La historia después del boom de la gastronomía peruana

Abstract

El presente artículo tiene como objetivos, por un lado, analizar la situación de la historiografía peruana referente a la alimentación en el contexto del boom gastronómico que está desarrollándose en este país y, por otro lado, presentar ciertas pautas para el desarrollo de esta tendencia dentro de la investigación histórica. El trabajo se centrará en tres puntos clave. En primer lugar, se explicará la necesidad de definir los conceptos y perspectivas de estudio históricos sobre la alimentación. En segundo lugar, se desarrollarán las precauciones para el uso de las fuentes en este tipo de historiografía. Por último, se analizará lo que se espera de la historia de la alimentación más allá del contexto del “boom”.This article aims to analyze the situation of Peruvian historiography regarding the subject food and feeding in the context of the gastronomic boom going on in this country and have certain guidelines for the development of this trend in historical research. The work will focus on three key points: the need to define concepts and historical perspectives around food studies, precautions for the use of sources in this type of historiography and what is expected of the history of food beyond the context of the "boom".
