De Raíz: kit de utensilios de cocina que mejoran los hábitos alimenticios y la salud en los adultos de edad intermedia de Lima Metropolitana

Resumen
Los malos hábitos alimenticios y el consumo masivo afectan la calidad de vida de las personas, deteriorando su estado de salud físico y mental. El estudio centra su investigación en los adultos de edad intermedia entre 40 y 50 años del NSE C de Lima Metropolitana, quienes experimentan el declive de sus capacidades físicas y se vuelven más vulnerables a enfermedades y afecciones. Los comportamientos basados en el consumo alimenticio se deben al impacto negativo del marketing alimenticio, que fomenta un estilo de vida insostenible debido a la comida rápida y los alimentos sobre procesados. Ante ello, teorías como el Nudge y Design for Behavioural Change fueron implementadas como estrategias para guiar la toma de decisiones responsables. En países como Estados Unidos, el diseño de artefactos y estrategias para racionalizar y balancear el consumo de alimentos, así como la promoción por la compra de insumos orgánicos, no han evidencian resultados exitosos a largo plazo que garanticen buenos hábitos alimenticios y mejoren la salud. En el contexto peruano, no se han encontrado grandes aportes desde la promoción de insumos identitarios de las raíces de la cultura peruana, los cuales son nutritivos y saludables. De Raíz, nace por la remembranza del imaginario del folklore peruano, vinculando raíces de la cultura local y su agricultura. Éste es un kit de utensilios de cocina complementado con un aplicativo móvil que fomenta los hábitos alimenticios responsables a partir de un consumo balanceado y saludable, aprovechando los beneficios que ofrece la agricultura peruana, rica en recursos genéticos nativos y con propiedades que mejoran la salud. Se realizaron estudios inductivos como encuestas, entrevistas y focus group para entender hábitos de comportamiento, motivaciones y barreras de los involucrados. Se interpretaron y analizaron datos para descubrir revelaciones y proponer nuevas formas de educación sobre el consumo saludable y responsable de alimentos. De Raíz logra moldear y mejorar los hábitos alimenticios del público objetivo mediante cambios de comportamiento y hábitos a largo plazo, preparaciones y el consumo de insumos peruanos nutritivos vinculados a la remembranza del imaginario del folklore peruano.
Bad eating habits and massive consumption affects people's quality of life, deteriorating their physical and mental health. The study focuses its research on middle-aged adults between 40 and 50 years old that belong to NSE C of Lima Metropolitana, who experience the decline of their physical capacities and become more vulnerable to diseases. Behaviors based on food consumption are due to the negative impact of food marketing, which encourages an unsustainable lifestyle due to fast food and over-processed foods. In response, theories such as Nudge and Design for Behavioural Change were implemented as strategies to guide responsible decision making. In countries like the United States, the design of products and strategies to rationalize and balance food consumption, as well as promoting the purchase of organic supplies, have not shown successful long-term results that ensures good eating habits and improve health. In the Peruvian context, no major contributions have been found from the promotion of local superfoods, which are nutritious and healthy. “De Raíz” was born from the remembrance of the imaginary of Peruvian folklore, linking the roots of the local culture and its agriculture. It is a kit of kitchen utensils complemented with a mobile application that promotes responsible eating habits based on balance and healthy consumption, taking advantage of the benefits offered by Peruvian agriculture, rich in native genetic resources and with health-enhancing properties. Inductive studies such as surveys, interviews and focus groups were used to understand the behavioral habits, motivations and barriers of the users involved. Data were interpreted and analyzed to uncover insights and propose new forms of education on healthy and responsible food consumption. “De Raíz” manages to shape and improve the eating habits of the target audience through long-term changes in behavior and habits, preparations and the consumption of nutritious Peruvian superfoods linked to the remembrance of the imaginary of Peruvian folklore.
