Resumen
La gastronomía ha evolucionado en los últimos años, volviéndose cada vez más
exquisita, que se ha dado por denominar la era gourmet, donde las especias como el orégano
(que es un planta aromática de hojas pequeñas), tienen un rol diferenciador por su aroma y
sabor.
El orégano se usa para aromatizar diferentes alimentos como ensaladas, pizzas,
caldos, salsas, licores digestivos, entre otras comidas, además es usado para los malestares
digestivos y tiene un rol antioxidante entre otras bondades medicinales. Los mayores
productores mundiales de orégano son Turquía, México, Marruecos, y Grecia, que orientan
su exportación a Estados Unidos. En el caso peruano el 2016 se exportó 4’898,563
kilogramos por un valor FOB de US$12’323,463, sembrado mayormente en las regiones de
Tacna, Lima, Arequipa, y Moquegua. Tacna es la de mayor producción con un crecimiento
expectante en la última década considerando su producción, pero afronta dificultades internas
como bajo poder de negociación de los productores de orégano debido a su dispersión y
tamaño de parcelas, dificultades de acceso a fuentes tecnológicas y financieras, etc. Además
existen amenazas externas (nuevos productores como Argentina y Bolivia).
El presente trabajo tiene la perspectiva de mejorar el negocio del orégano en la región
Arequipa y su objetivo es elaborar un plan estratégico para el desarrollo de este producto en
la región, a fin de convertirse en el primer productor del Perú y principal exportador. El plan
estratégico esta formulado conforme a los lineamientos establecidos, abordando el análisis
interno y externo del orégano en el contexto internacional y de la región Arequipa, dando
lugar al planteamiento de estrategias específicas para su ejecución en bien del desarrollo del
orégano de esta región y por consecuencia del país
Gastronomy has evolved in recent years, becoming more and more exquisite, which has come to be called the gourmet era, where spices such as oregano (which is an aromatic plant with small leaves), have a distinctive role because of its aroma and flavor. Oregano is used to flavor different foods such as salads, pizzas, broths, sauces, digestive liqueurs, among other foods, it is also used for digestive ailments and has an antioxidant role among other medicinal benefits. The world's largest producers of oregano are Turkey, Mexico, Morocco, and Greece, which direct their export to the United States. In the Peruvian case in 2016, 4’898,563 kilograms were exported for an FOB value of US$12’323,463, planted mostly in the regions of Tacna, Lima, Arequipa, and Moquegua. Tacna is the one with the highest production with expectant growth in the last decade considering its production, but faces internal difficulties such as low bargaining power of oregano producers due to their dispersion and size of plots, difficulties of access to technological and financial sources, etc. There are also external threats (new producers such as Argentina and Bolivia). The objective of this paper is to improve the oregano business in the region of Arequipa and its objective is to develop a strategic plan for the development of this product in the region, in order to become the first producer in Peru and the main exporter. The strategic plan is formulated according to established guidelines, addressing the internal and external analysis of oregano in the international context and the Arequipa region, giving rise to the development of specific strategies for the development of oregano in this region and Consequence of the country
