Resumen
El objetivo de este artículo es hacer una revisión de la literatura sobre el uso de residuos del procesamiento de jugo de maracuyá, entre los que se hallan las cáscaras y pepas. El 96% de la producción nacional de este fruto se destina a la exportación de jugo, y el 62% es cáscara, rica en diversos componentes —como fibra dietaria o pectina, entre otros— que pueden emplearse para la elaboración de subproductos, considerando que la disponibilidad de materias primas y la accesibilidad a alimentos para consumo humano es uno de los problemas cruciales que enfrenta la humanidad, así como el desequilibrio medioambiental ocasionado por la acción antropogénica derivada de la explotación y rentabilidad de recursos sin prever su sostenibilidad para las generaciones venideras. Dado el costo de las pruebas experimentales que genera el diseño y elaboración de productos, se desarrolla esta investigación para identificar las alternativas de utilización de los residuos de la materia prima, y en una siguiente etapa evaluar su potencial para elaborar productos adicionales al convencional, conocidos como subproductos. Se utilizaron las bases de datos Scopus y Science Direct para la revisión sistemática de las publicaciones del periodo 2014-2020.
The objective was to review the bibliography about the use of residues from the processing of passion fruit juice. Due 96% of the national production of this fruit is destined to the export of juice, where 62% is peel, which is rich in dietary fiber, pectin, among other components; that can be used for the production of by-products, considering that the availability of raw materials and accessibility to food for human consumption is one of the crucial problems facing humanity, understanding that the environmental imbalance was caused by anthropogenic action derived from exploitation and profitability of resources without foreseeing their sustainability for future generations. Given the cost of the experimental tests generated by the design and elaboration of products, this investigation is developed to identify the alternatives of use of the residuals of the raw material, and in a next stage to evaluate their potential to elaborate additional products to the conventional known as by-products. The Scopus and Science Direct databases were used for the systematic review of publications from 2014 to 2020.
