Modelo prolab: Propuesta de negocio para optimizar el aprovechamiento de la cascarilla de café en el Perú

Resumen
El Perú posee uno de los principales productos de agroexportación: el café, este
constituye como sustento básico para muchas familias ubicadas en las zonas rurales. Sin
embargo; el grano de café no es aprovechado al máximo, generándose un subproducto que es la
cascarilla de café, la cual no posee un mayor valor agregado y, por el contrario, es visto como un
contaminante ambiental, debido a que en la mayoría de los casos es depositado en los ríos,
contribuyendo a la destrucción de hábitats o incluso contaminando las aguas.
Por ello, se requiere desarrollar alternativas innovadoras para darle un mejor
aprovechamiento a la cascarilla de café, beneficiando a caficultores a través de un aumento en
sus ingresos en un mercado existente para este subproducto. Partiendo de esa premisa, nace la
propuesta de valor “RE-SET”, que consiste en elaborar productos (infusiones y harina) en base a
la cascarilla de café. Obteniendo a través de los testeos y encuestas realizadas en Lima, un
resultado favorable sobre el sabor y la demanda de este producto.
Adicionalmente, esta propuesta de negocio busca beneficiar a las zonas rurales del Perú,
empezando con la comunidad de Rodríguez de Mendoza (Amazonas), mediante una alianza con
la Cooperativa de la Provincia para el recojo y abastecimiento del insumo. A partir de ello, se ha
establecido un ingreso adicional de S/ 20 por cada kg de cascarilla adquirida a un caficultor. Por
otro lado, se busca promover la cultura y el turismo de estas zonas, así como reducir los efectos
negativos en el medio ambiente.
Finalmente, la proyección a cinco años de los indicadores financieros de esta propuesta
de negocio demuestra que existe una un resultado económico positivo. La inversión inicial
aproximada será de 250 mil soles, con un aporte de accionistas de un 40% y 60% financiado a
través de una institución financiera. Considerando un Costo Promedio Ponderado de Capital
(WACC) de 17%, se obtiene un Valor Actual Neto (VAN) Económico y Financiero positivos
para los tres escenarios (pesimista, conservador y optimista), así como un Tasa Interna de
Retorno (TIR) positivo.
Peru has one of the main agro-export products: coffee. This constitutes as a basic sustenance for many families located in rural areas. However; the coffee bean is not used to the fullest, generating a by-product that is the coffee husk, which does not have a greater added value and, on the contrary, is seen as an environmental pollutant, because in most cases it is deposited in rivers, contributing to the destruction of habitats or even polluting the waters. Therefore, it is necessary to develop innovative alternatives to give a better use to the coffee husk, benefiting coffee growers through an increase in their income in an existing market for this by-product. Based on this premise, the “RE-SET” value proposition was born, which consists of making products (infusions and flour) based on coffee husk. Obtaining through the tests and surveys carried out in Lima, a favorable result on the taste and demand of this product. Additionally, this business proposal seeks to benefit the rural areas of Peru, starting with the community of Rodriguez de Mendoza (Amazonas), through an alliance with the Cooperative of the Province for the collection and supply of input. From this, an additional income of S/ 20 has been established for each kg of husk acquired from a coffee grower. On the other hand, it seeks to promote the culture and tourism of these areas, as well as reduce the negative effects on the environment. Finally, the five-year projection of the financial indicators of this business proposal shows that there is a positive economic result. The approximate initial investment will be 250 thousand soles, with a contribution from shareholders of 40% and 60% financed through a financial institution. Considering a WACC of 17%, a positive Economic and Financial NPV is obtained for the three scenarios (pessimistic, conservative and optimistic), as well as a positive IRR.
