Resumen
Este proyecto se enfocó en el sector agroindustrial de Ica, especialmente en los problemas
sociales derivados de la inestabilidad política y económica que se viene generando a nivel
nacional y mundial. Entre los problemas de índole social, destacan las deficiencias en los
servicios de alimentación, motivo por el cual, se busca mejorar estos servicios. Como
estrategia de solución, se propone un modelo de negocio orientado hacia la mejora del
servicio de alimentos que actualmente brinda la agroindustria, pero que no cumple con ciertas
condiciones para poder mejorar la calidad de vida de sus colaboradores de campo y planta. El
modelo de negocio propuesto está basado en utilizar los actuales contratos de concesiones de
servicio alimentario y generar una propuesta de valor enfocada en mejorar el estado de salud
de los colaboradores. Es así que, a través de este modelo de negocio se podrá identificar y
diagnosticar la salud de los colaboradores, para determinar qué alimentos deben dejar de
utilizarse y qué alimentos deberán empezar a ser considerados dentro de las dietas de los
menús, que serán parte del servicio alimentario contratado. Este modelo de negocio y su
propuesta podrá ser escalable considerando que esta problemática existe en la mayoría de
grandes agroindustrias de la zona y de esta manera mejorar sus condiciones de seguridad y
salud en el trabajo. A través del modelo de negocio, se comprobó la viabilidad económica,
concluyendo que el proyecto es viable con un VAN de S/ 3’967,326.56 para un período de
tiempo de cinco años; además de que se obtuvo una TIR de 184%; un Beneficio / Costo de
11.99 y un período de recuperación de la inversión de 1.03. En lo que respecta al impacto
social del proyecto, se puede concluir que generará un VANS de S/5’989,240.16
($1’576,115.83), considerando ciertos beneficios y costos sociales. Se debe destacar también
que el proyecto del servicio de alimentación saludable para el personal de las empresas
agroexportadoras cumple con el ODS 8 (metas 8.3, 8.5, y 8.8) y el ODS 3 (metas 3.4, 3.9, y
3d).
This project focused on the agroindustry sector of Ica, especially on the social problems derived from the political and economic instability that has been generated at the national and global level. Among the social problems, deficiencies in food services stand out, which is why we seek to improve these services. As a solution strategy, a business model is proposed oriented towards improving the food service currently provided by agribusiness, but that does not meet certain conditions to improve the quality of life of its field and plant collaborators. The proposed business model is based on using current food service concession contracts and generating a value proposition focused on improving the health status of employees. Thus, through this business model, the health of collaborators can be identified and diagnosed, to determine which foods should stop being used and which foods should begin to be considered within the diets of the menus, which will be part of the contracted food service. This business model and its proposal may be scalable considering that this problem exists in the majority of large agribusinesses in the area and in this way improve their health and safety conditions at work. Through the business model, the economic viability was verified, concluding that the project is viable with an NPV of S/ 3’967,326.56 for a time period of five years; in addition, an IRR of 184% was obtained; a Profit/Cost of 11.99 and a payback period of 1.03. Regarding the social impact of the project, it can be concluded that it will generate an NPV of S/5’989,240.16 ($1’576,115.83), considering certain social benefits and costs. It should also be noted that the healthy food service project for the staff of agro-export companies complies with SDG 8 (goals 8.3, 8.5 and 8.8) and SDG 3 (goals 3.4, 3.9, and 3d).
