Resumen
La presente investigación tuvo como propósito identificar las buenas prácticas en la
gestión de inventarios en el sector de bebidas gaseosas en el Perú mediante la exploración
cualitativa de la gestión de inventarios de productos terminados, la gestión de la
incertidumbre de la demanda, la gestión de la cadena de suministros, la gestión de la logística
de distribución y del uso de tecnología. El estudio utiliza el paradigma cualitativo basado en
estudios de caso a profundidad de tres de las empresas líderes en el sector de bebidas
gaseosas en el Perú. El estudio utilizó las entrevistas a representantes de estas empresas e
información proporcionada por ellas como fuente primaria para recolección de información, y
como fuente de información secundaria la información pública de las mismas.
La información obtenida ayudó a identificar que las empresas gestionan sus
inventarios utilizando métodos para clasificar sus inventarios, usan prácticas de codificación,
usan prácticas para mantener la exactitud en los inventarios y utilizan estrategias para
controlar la obsolescencia enfocados en la frescura del producto con una estrategia de la
gestión de inventarios alineada con la estrategia del negocio. También afrontan la
incertidumbre de la demanda usando herramientas de pronóstico, estrategias de postponement
y cuentan con herramientas para conocer la demanda en tiempo real. Adicionalmente su
gestión de inventarios se relaciona con la cadena de suministros utilizando estrategias
colaborativas a lo largo de la cadena. Referente a la logística de distribución cuentan con
redes de distribución alineadas con la estrategia comercial y operativa y utilizan estrategias
de riskpooling. Finalmente, sobre el uso de la tecnología usan sistemas informáticos, equipos
y dispositivos para hacer más eficiente la gestión de sus inventarios. En conclusión, se
identificaron buenas prácticas de gestión de inventarios en las empresas participantes del
estudio del sector de bebidas gaseosas en el Perú.
The purpose of this research was to identify good practices in the management of inventories in the carbonates soft drink sector in Peru through the qualitative exploration of the inventory management of finished products, the management of demand uncertainty, the management of the supply chain, the logistics management of distribution and the use of technology. The study uses the qualitative paradigm based on in-depth case studies of three of the leading companies in the carbonates soft drink sector in Peru. The study used interviews with representatives of these companies and information provided by them as a primary source for information collection, and as a source of secondary information public information of them. The information obtained helped to identify that companies manage their inventories using methods to classify their inventories, use coding practices, use practices to maintain the accuracy of inventories and use strategies to control obsolescence focused on the freshness of the product with a strategy of inventory management aligned with the business strategy. They also face the uncertainty of the demand using forecasting tools, postponement strategies and have tools to know the demand in real time. Additionally, its inventory management is related to the supply chain using collaborative strategies throughout the chain. Regarding distribution logistics, they have distribution networks aligned with the commercial and operational strategy and use risk-pooling strategies. Finally, on the use of technology they use computer systems, equipment and devices to streamline the management of their inventories. In conclusion, good inventory management practices were identified in the companies participating in the study of the carbonates soft drink sector in Peru.
