Resumen
El objetivo central del trabajo fue identificar la aplicación de la gestión ambiental en
CNCH, lo que permite a)identificar la aplicación de las buenas prácticas ambientales en el
consumo y uso del agua, b) identificar la aplicación de las buenas prácticas ambientales en el
consumo y uso de la energía eléctrica, c) identificar la aplicación de las buenas prácticas
ambientales en el consumo y uso de materias primas e insumos, d) identificar la aplicación de
las buenas prácticas ambientales en la gestión y generación de residuos. De esta manera, este
trabajo tiene un enfoque cuantitativo, tipo descriptivo, diseño no experimental observacional
longitudinal, realizándose en una empresa alimentaria ubicada en Lima.
En la actualidad, la gestión ambiental consiste en emplear un conjunto de métodos,
técnicas para el uso menor de los recursos naturales y por ende generar una menor
contaminación ambiental. Para la aplicación de la gestión ambiental se evaluó a CNCH en
sus procesos productivos con el uso de los recursos naturales, utilizando el cuestionario de las
buenas prácticas de la gestión del uso eficiente en el tratamiento del agua, energía y materias
primas, entrevistas de preguntas abiertas para identificar si la empresa conoce y aplica la
gestión ambiental. Por último, se concluye que CNCH si aplica la gestión ambiental en sus
procesos productivos, sin embargo, carece de aplicar la distribución correcta de suministros a
cada línea de producción, no logrando identificar la asignación de costos a cada producto.
The aim of this research work was to identify the application of environmental management in CNCH, which allows a) to identify the application the best environmental practices in the consumption and use of water, b) to identify the application the best environmental practices in the consumption and use of energy, c) identify the application the best environmental practices in the consumption and use of raw materials and inputs, d) identify the application the best environmental practices in the management and generation of waste. In this way, this work has a quantitative approach, descriptive type, longitudinal observational non-experimental design, being carried out in a food company located in Lima. At present, environmental management consists of using a set of methods, techniques for the lower use of natural resources and therefore generate less environmental pollution. For this reason, it has been considered to evaluate CNCH in application of environmental management in its production processes with the use of natural resources, using the questionnaire the best practices in the management of the efficient use of water, energy and raw materials, interviews of open questions to identify if the company knows and applies environmental management. Finally, it is concluded that CNCH does apply environmental management in its production processes, however, it lacks applying the correct distribution of supplies to each production line, failing to identify the allocation of costs to each product.
