Resumen
Esta tesis consiste en un diagnostico operativo de la Agropecuaria Roxana SAC,
empresa que pertenece al sector pecuario, específicamente avícola, dedicada a la producción
de huevos comerciales, con una capacidad de aproximadamente 210 mil aves, abasteciendo al
mercado mayorista de Lima. La empresa vende un único producto sin mayor diferenciación y
sin poder negociar el precio en el mercado se mueve en función de la oferta y la demanda con
una variación cíclica anual, de modo que la estrategia de la empresa se centra en el control de
los costos, el aumento de la productividad y el escalamiento del volumen de producción.
Como resultado del análisis realizado en los principales procesos operativos y de
soporte, incluyendo la ubicación y dimensionamiento de la planta, planeamiento y diseño de
los productos, del proceso, de la planta y del trabajo, el planeamiento agregado, la
programación de operaciones productivas, la gestión de costos, de la logística, del
mantenimiento y de la cadena de suministro, bien como la gestión y control de la calidad, se
identificaron posibles mejoras que llevaron, a través de un análisis crítico y aplicación de
buenas prácticas encontradas en la literatura especializada, a propuestas de cambio que tienen
un potencial beneficio económico anual de S/ 1’652,430 con una inversión requerida de
S/ 962,300.
Este trabajo busca servir de referencia para las empresas productoras de huevos de
tamaño medio que se preparan para formalizar e industrializar sus procesos y mejorar su
rentabilidad. Al mismo tiempo se establece un punto de inicio para el desarrollo de futuras
investigaciones que estudien la comercialización de los insumos necesarios para esta
industria y la distribución de productos frescos perecibles como los huevos comerciales.
This thesis consists in an Operational Diagnosis of Agropecuaria Roxana SAC, a company which operates in the livestock sector, more specifically chicken farm, dedicated to the production of commercial eggs, with capacity of approximately 210 thousand animals, supplying the wholesale market of Lima. The entity commercializes a single product which has no significant differentiation and no price negotiation power as the market fluctuates according to the supply and demand subject to a yearly cyclical variance, resulting in a strategy centered in cost control, productivity increase and search for economies of scale from higher volume. As a result of the analysis performed in the main operating and supporting processes, including the location and sizing of the plant, product, process, plant and job planning and design, aggregate demand planning, operational production planning, cost, logistics, maintenance and supply chain management, as well as the quality management and control, possible improvements have been identified which, through critical thinking and application of best practices found in the specialized literature, led to proposed changes that, if implemented, have a potential economic yearly benefit of S/ 1’652,430, with required investment of S/ 962,300. This study is intended to serve as reference for medium-sized egg producers seeking to formalize and industrialize their processes to improve their profitability. Moreover, it establishes a starting point for the development of future research on the commercialization of raw materials required for this industry and distribution of fresh perishable produce such as commercial eggs.
