Modelo prolab: Delifish, una propuesta de negocio para la elaboración de hamburguesas marinas con enfoque sostenible

Abstract
El emprendimiento Delifish tiene como propósito ofrecer productos alimenticios sanos
provenientes de la fauna marítima peruana, para hacer frente a la problemática existente de
una inadecuada alimentación en la sociedad, y que finalmente conlleva a la aparición de
factores de comorbilidad en la salud como obesidad, diabetes, hipertensión, entre otros, que
ponen en riesgo la salud de las personas. El producto elaborado a partir del emprendimiento
consiste inicialmente en una hamburguesa de pota natural, nutritiva, de sabor agradable y de
precio asequible (S/13.00 por un paquete de seis unidades) que contribuiría a la alimentación
saludable en la sociedad. Para lograrlo, se tiene como aliado estratégico al Gremio de
Pescadores de Pucusana, el cual proveería la materia prima y; a su vez, les permitiría tener
una fuente de ingresos asegurada de acuerdo con las proyecciones de ventas del producto.
Durante el proceso de validación de deseabilidad, factibilidad y viabilidad del modelo de
negocio, se pudo comprobar mediante encuestas, entrevistas, fotos y videos la aceptación del
producto por parte de los clientes potenciales. En cuanto al análisis de viabilidad, se
consideró una inversión inicial de S/720,000 y una proyección de los flujos de caja a 5 años
de operación. El valor actual neto (VAN) económico, la tasa interna de retorno (TIR) y el
VAN social fueron de S/ 3’706,814, 104.11% y S/ 3’375,035, respectivamente. Con ello se
sustenta que la propuesta de negocio es sostenible, escalable e incide directamente en
distintas metas específicas de dos objetivos de desarrollo sostenible: ODS 3-Salud y
bienestar-Garantizar una vida sana y promover el bienestar de todos, y ODS 8-Trabajo
decente y crecimiento económico-Promover el crecimiento económico sostenido, inclusivo y
sostenible, el empleo pleno y productivo y el trabajo decente para todos.
The entrepreneurship called Delifish has the purpose to offer healthy food from the Peruvian sea to address the current problem of malnutrition in our society which leads to the appearance of comorbidity factors in health such as obesity, diabetes, hypertension, and others, that put in risk the health of Peruvians. The product offered consists of a natural, nutritious, good tasting and affordable squid burger (S/13.00 per package of six units) that will contribute to the healthy nutrition of the society. To achieve this aim, the business has and strategic ally, which is the Pucusana Fishermen’s Association, that will provide the raw material. This will allow them to have secure incomes according to the sales forecast. During the validation process of desirability, feasibility, and viability of the business model, it was possible to verify the acceptance by potential customers through surveys, interviews, and taste tests. Regarding the feasibility analysis an initial investment of S/720,000 and a cashflow of five years is considered. The economic net present value (NPV) is S/3,545,991, the internal rate of return (IRR) is 104.57% and the social net present value is S/ 3,375,035. These numbers support the fact that de business model is sustainable, scalable, and is directly related with two sustainable development goals: ensure healthy lives and promote well-being for all at all ages and promote sustained (goal 3), inclusive and sustainable economic growth, full and productive employment, and decent work for all (goal 8)
