Resumen
El sector turismo ha tenido un desarrollo importante en los últimos diez años como
consecuencia de las políticas integrales de los gobiernos de turno, contribuyendo al PBI
nacional con alrededor del 6%; dentro de este, el sub sector gastronómico y de restauración
viene presentado un auge sin precedentes, tanto en nuestro país como a nivel internacional.
El restaurante Hebrón S.A.C., ubicado en la ciudad de Chiclayo no es ajeno a esta
realidad, razón por la cual sus directivos tomaron la decisión de permitir la realización de un
diagnóstico integral de su organización y elaborar un Planeamiento Estratégico, con el
objetivo de poder establecer las estrategias más adecuadas para poder competir exitosamente
en este entorno.
El análisis desarrollado se basó en el Modelo Secuencial del Proceso Estratégico,
partiendo del establecimiento de una visión, misión, valores organizacionales y código de
ética que guiarán el accionar de toda la organización; se realizó un profundo análisis interno
de la organización a través del estudio de las áreas contempladas en el diseño organizacional;
en el análisis externo se investigó sobre los distintos sectores, utilizando el análisis PESTE
así como el comportamiento de la competencia. Se determinaron los objetivos de largo y
corto plazo en función de los cuales se establecieron las estrategias más adecuadas, las
mismas que fueron tamizadas y validadas a través de una serie de matrices estratégicas que
describiremos a lo largo del presente trabajo. Al final se concluye que la organización en
estudio se encuentra en un momento propicio para desarrollar las estrategias sugeridas, de tal
forma que se acerque cada vez más a la visión deseada para la organización
The tourist industry has had a significant development in the last 10 years as a consequence of the comprehensive policies of the governments in power. That fact contributed to the national GDP with about 6%. Inside it, the gastronomic and catering sub sector has been showing a great boom that has not been seen before in our country as well as internationally. Hebrón Restaurant S.A.C., located in the city of Chiclayo is not unfamiliar with this reality. That is why its executives made the decision of allowing the implementation of a comprehensive diagnostic of its organization and the elaboration of a Strategic Plan in order to be able to determine the most suitable strategies that lead to its capability to compete in this area successfully. The analysis developed was based in the Sequential Model of the Strategic Process, starting by establishing a vision, mission, organizational values and the ethical code that will guide the operations of every organization. A deep analysis of the organization was carried out by studying the areas outlined in the organizational design. In the external analysis the different sectors were researched using the PEST analysis as well as the competitors’ behavior. The long and short term goals were set and they were kept in mind when setting the most adequate strategies. These strategies were sifted and validated using a series of strategic matrixes that we will describe along this work. In conclusion, the organization being studied is situated in a favorable moment to develop the suggested strategies in such a way that it comes closer and closer to the vision of the organization
