Modelo prolab: propuesta de producto altamente proteico derivado de “tenebrio molitor” para prevenir la anemia en Perú

Resumen
La anemia en el Perú es un problema que afecta al 24.8% de la población lo cual
representa más de 8 millones de personas (OMS,2020). Este problema se asocia
estrechamente con la desnutrición, lo que indefectiblemente genera impacto negativo en su
evolución cognitiva, psicomotor y nerviosa. Para abordar este problema, se propone la
producción innovadora de muffins fortificados a base de harina de Tenebrio Molitor, que no
solo ayuda a combatir la anemia, sino que también mejora la nutrición en personas con
deficiencias nutricionales gracias a su alto contenido proteico. Además, estos muffins pueden
ser beneficiosos para personas que practican deporte y para aquellos preocupadas por el
cuidado del medio ambiente que buscan una alimentación saludable. Así el modelo de
negocio incluye su comercialización, pruebas con usuarios, plan de operaciones, flujos de
caja, entre otros, que confirman que resulta factible y viable con una inversión de S/. 637,556,
la cual generará un VAN proyectado de S/ 6’988,379 en cinco años, así como un VANS de S/
1 ́527,852 en cinco años. A ello debemos sumar, que este modelo se encuentra en alineado
con los ODS 2, 12 y 13, con un IRS de 50%, 36% y 25% respectivamente, puesto que el uso
de Tenebrio Molitor como fuente de proteína alternativa promueve no sólo la sostenibilidad
respecto a la producción de alimentos, sino también contribuye a la reducción de la huella de
carbono.
Anemia in Peru is a problem that affects 24.8% that representing more than 8 million people (OMS, 2022). This problem is associated with malnutrition, which inevitably generates a negative impact on their cognitive, psychomotor, and nervous evolution. To address this problem, an innovative production of muffins fortified with Tenebrio Molitor flour is proposed, which not only helps combat childhood anemia but also improves nutrition in people with nutritional deficiencies thanks to its high protein content. In addition, these muffins can be beneficial for athletes and environmentally conscious people seeking healthy food. Thus, the business model includes its commercialization, whose tests with users, operations plan, cash flows, among others, confirm that the business model is feasible and viable. In this way, the business model with an investment of S/. 637,556 will generate a projected NPV of S/ 6’988,379 over five years, as well as a social NPV of S/ 1 ́527,852 over five years. Additionally, it aligns with SDGs 2, 12, and 13, with an IRS of 50%, 36%, and 25%, respectively, as the use of Tenebrio Molitor as an alternative protein source promotes sustainability in food production and contributes to reducing the carbon footprint. In summary, this business model is not only financially profitable but also offers an important solution to a public health problem and is sustainable and socially responsible.
