Resumen
La industria mundial del cacao abarca una variedad de tipos de productos, de los
cuales el chocolate y el cacao en grano son los que han concentrado la mayor parte de las
exportaciones e importaciones en los últimos años. El sector peruano ha seguido la misma
tendencia; sin embargo, este se ve en la necesidad de definir un nuevo enfoque, debido a la
informalidad de sus integrantes, las deficiencias en la cadena de valor y los altos niveles de
cadmio presentes en los suelos de cultivo. Asimismo, dada la dependencia del mercado de
cacao convencional en Costa de Marfil y Ghana como principales productores y
exportadores, las regulaciones inminentes sobre los límites máximos de cadmio permitidos y
el impacto de plagas, enfermedades y cambio climático, el Perú debe buscar diferenciarse en
función de los atributos demandados por sus clientes.
Para lograrlo, la industria de cacao peruana debe desarrollar el producto de cacao fino
de aroma para los mercados de la Unión Europea y Estados Unidos, bajo una marca nacional
que permita promocionar las distintas variedades que posee para atender las necesidades de
los segmentos objetivo. Además, la implementación de alianzas estratégicas con
organizaciones especializadas, públicas y privadas le permitirán superar las debilidades y
amenazas mencionadas. De esta manera, la industria de cacao en el Perú podrá incrementar
sus exportaciones, aumentar su participación de mercado y generar mayor empleo, para así
llegar a ser una de las principales representantes en el sector de cacao fino de aroma en el
ámbito regional, e incluso, mundial
The world cocoa industry covers a variety of products types, where chocolate and cocoa beans have concentrated most of the exports and imports in recent years. The Peruvian sector has followed the same trend; however, it needs to define a new approach, due to the informality of its members, the deficiencies in the value chain and the high levels of cadmium present in the soil. In addition, given the dependence of the conventional cocoa market in Côte d'Ivoire and Ghana as the main producers and exporters, the imminent regulations on the maximum limits of cadmium allowed and the impact of pests, diseases and climate change, force Peru to seek differentiation according to the attributes demanded by its customers. In order to achieve this, the Peruvian cocoa industry must develop the fine or flavor cocoa product for the European Union and the United States markets, under a national brand that promotes its different varieties to meet the needs of the target segments. Furthermore, the implementation of strategic alliances with specialized organizations, public and private, will allow overcoming the weaknesses and threats mentioned above. Thus, the cocoa industry in Peru will be able to increase its exports, market share and generate more employment, to become one of the main representatives in the fine or flavour cocoa sector at the regional and even worldwide level
